Last night, I was browsing for chocolate gift box since the holidays are coming around and there are many places offer many delicious vegan chocolates but gluten free is not one of them. Therefore, I decided to have a trial of making them and the gift wrapping will come after as I can find many cute boxes to spread vegan love this holiday! π±πβ€οΈ
Recipe to make parchment paper lined 8x8 pan :
1. Soak 1.5 cup of raw cashews for few hours. (Hot water will speed up the process).
2. Roast 1 cup of almonds and chop roughly.
3. Blend in a high speed mixer: soaked cashews, 1/2 cup of maple syrup, 1/2 cup of cacao powder with melted 1/3 cup of cacao butter.
4. Mix the content with chopped almonds and garnish with more roasted almonds and goji berries on top.
5. Leave in the fridge overnight or freezer for 20 mins and ready to cut and serve.π
These are so delicious with a nice cup of tea. ππ
