For today meal, I made Palak Mushroom Curry and Oat Roti thatβs full of nutrients and delicious. ππ
Recipe for Palak Mushroom Curry:
1. PurΓ©e fresh spinach, mushrooms and tomatoes.
2. In medium heat pot: add olive oil, Cumin seeds, clove garlic, onions, mushrooms, turmeric powder, cayenne pepper, coriander powder, salt and pepper.
3. Mix purΓ©e in the pot and add water/plant based milk. (I used water this time).
Recipe for Oat Roti:
1. Mix 60g of oat flour (always go by grams with oat instead of volume because of the density), 2 tbsp psyllium husk powder, 1/4 tsp baking soda, 1 tsp of garlic powder, and a bit of salt to taste.
2. Blend well with 1 cup of warm water and divide the dough into 4 portions. Flat them and heat in any regular pan you have with a bit drizzle of olive oil. (Pic collage included in reply for demonstration).
