My little cousin is allergic to nuts and he loves cake and jelly as many kids do. Heβs going to visit me soon for a swim so I figured to make a healthy purple sweet potato, coconut milk jelly cake for our treat this afternoon. ππ
The jelly cake has 2 layers:
1st. Base cake: I used rice flour, potato starch, and lightly mashed purple potatoes into little chunks. I steamed the cake mix in a bamboo steamer instead of baking.
2nd. Jelly: vegan agar combined with coconut milk, purple potatoes purΓ©e, a bit of sugar cane and vanilla extract. Pour on top of the steamed cake and let it cool down.
Chill the jelly cake in the fridge for at least an hour, until itβs ready to serve. ππ
