Since Iβm gluten-free vegan diet and I love Nutella very much so I made my own homemade version.π±π°πβ€οΈ
Vegan Nutella: I roasted organic almond and used my Blendtec twister to make almond butter. Transferred the almond butter to my food processor and added vegan nutrients dense cacao powder with a little bit of my homemade cashew milk. The result is beautiful and delicious, Iβm very happy about it. ππ
Vegan Cupcakes: I saved my Nutella in my glass jar and the rest of it I used to make cupcakes (just need to add gluten-free flour, baking powder and a little bit more cashew milk and maple syrup). Added almond slices on top as the last step. I baked 12 cupcakes at 350F for 30 mins. I shared half with my parents and they love them. π§ππ

Yes no more supermarket mass produced for me. I like the fact that almond has great amount of calcium and we can control no table sugar added in.π
Okay, I just attached you the pic of my old Nutella bottle and I wouldnβt recommend you to try it though. This is the reason why I made my own: 1st ingredient is Sugar and then palm oilβ¦. all bad and 200 calories in 2 tbsp. π€―

Your cupcakes looks great. Have you tried making chocolate spread using roasted hazlenuts? I did once but the consistency wasn't quite right.
There is an amazing vegan chocolate spread by Vego (in the UK at least) but that is bound to have a lot of sugar etc in... Good for the odd treat (I've only had it once or twice, as a gift)

I havenβt tried to make with hazelnuts because I currently have a lot almonds and cashews. Itβs quite a process of making almond butter because they are hard texture, have to grind many times. And then last step is blending with a bit cashew milk in food processor and it comes out very smooth and thick. I would think hazelnuts much softer and easier to blend to the right consistency.π€
We donβt have Vego in US but we have Nutiva and same problem with sugar. I use Nutella in my oatmeals quite often so I gotta make it.
I can imagine it taking a long time to grind almonds down! I'll definitely try again with the hazlenuts - roasting them gives the house such a lovely aroma so it's worth it for that alone.
