Hello there fedupoffeelingtired , welcome to the Vegan community.
I've got to be very careful what I eat as I have IBS but have kept a food diary since January 2020 and followed the low fodmap diet. I make just about all my own food as I know I can eat it and what's in it. The Vegan burgers you can buy tend to have pea protein in them and I react to it.
Two very good places to find some excellent recipes are One Green Planet and Veganuary, I also like Minimalist Baker, it's not solely Vegan but does have some excellent Vegan recipes.
My favourite sweet recipe are sweet potato brownies, they are gorgeous and I've been making them for a very long time. Here's the recipe and some tips.

I use 252g cooked sweet potato, 160ml maple syrup, 129g peanut butter, (I don'tadd oil), 55g cacao powder (I prefer to cocoa), 68g oat flour (I make my own by grinding down oats in my food processor), 61g chopped pecans, 48g dark chocolate chips and 90ml of almond or oat milk. These are absolutely stunning. The recipe doesn't include milk but this makes them extra gooey.
I just can't get enough of these.

A good way to approach this is slowly. I would suggest not looking for meat substitutes when cooking and try to stay away from over processed ready vegan and veg meals. They can be high in salt. The River Cottage Veg cookery books especially the Much More Veg help to restructure your cooking as it were towards vegetables being the centre of a meal. Seasoning and flavouring are vital. I hope you love garlic ! Roast the vegetables whe ever you can. It enhances flavours hugely.I have loads of vegan and veg cookery books at my disposal for ideas.
And research your nutritional needs and make sure you have a balance. Personally I am hooked on tofu, mushrooms and chickpeas for my protein.
