I asked my friend for the ginger cake recipe and here it is: 350g plain gf flour 225g dark brown sugar 225ml water 100ml oil 80g treacle 2 table spoons stem ginger in syrup 1 teaspoon cinnamon 1 teaspoon mixed spice 1 teaspoon baking powder 1/2 teaspoon bicarbonate 1\2 teaspoon Xanthan gum (to help bind)
Mix all ingredients into a batter and bake in a greased cake tin for approx 40mins at 180C until cooked through.
Allow to cool and coat with icing and then enjoy.ππ

Looks like a lovely cake although don't see the plant based angle or the gluten free ... But I love ginger cake with custard. I could try it with almond flour and date sugar and coconut oil and really ya can't go wrong with ginger can you!! Just what I need for comfort food!

It says flour.? Should it say gluten free flour? And then sugar and then oil. There's no plants in that. I mean if that's plant based everything is plant based including plastic bags... And yes technically everything in it comes from plants but As far as I am aware the term plant based diet ..well maybe I'm wrong ...whenever anyone has said to me they eat a plant based diet I imagined them eating whole plants not the same processed boxes of sugar and fat everyone else eats....I mean cocopops are plant based. Cake in a shop is plant based... Plastic bags are plant based. Maybe its just a reallyfancy way to say I don't eat meat? I'm vegan? I honestly got the impression plant based diet meant eating fruits and vegetables ....lol. And here is me thinking that and you're really just eating processed stuff like everyone else. Wow I'm going to look differently at people who use that term now. Good to know. They seem so smug and yet there they are ....what do people who eat a diet based on whole plants call themselves? Is that whole food diet? Maybe thats my mix up. Lol! Thsts so funny.

Hi Hidden I put gf flour and as for plant based that just another way of saying that it is vegan. Vegans also wear plant based clothes and shoes so it isn't just what they eat its the whole lifestyle ethos.
Shop bought cakes have eggs and milk so are not plant based or vegan.

Ah I see. I did not know that's what it meant lol! I had imagined everything was a plant lol!! Like you couldn't use sugar and had to use carrots for sweetness or something! Thanks for explaining it for me!
It looks fab Jerry. I'm off to buy ginger in syrup ( I love that stuff anyway!) I have a tiny ice cream maker and I made vegan vanilla ice cream last year. A slice of ginger cake and a dollop of icecream and I will be in foodie heaven.
