I've now made what I'm having for Christmas dinner, Vegan Meatloaf, recipe below.

I didn't have any Sweet Chilli Sauce so I added chilli powder to tomato puree and that was my sauce. I used sourdough bread for the breadcrumbs as I can't tolerate normal baked bread. I found the mixture to be quite dry so I added some vegetable stock and it worked really well.
For the topping I used coconut sugar instead of brown sugar.
I tried some before putting it in the freezer and it was delicious, I much prefer this over a nut roast and will definitely make it again.
Don't think the presentation would be good enough for Masterchef though.🤣 The photo doesn't show the true colour.
