I didn't have any Sweet Chilli Sauce so I added chilli powder to tomato puree and that was my sauce. I used sourdough bread for the breadcrumbs as I can't tolerate normal baked bread. I found the mixture to be quite dry so I added some vegetable stock and it worked really well.
For the topping I used coconut sugar instead of brown sugar.
I tried some before putting it in the freezer and it was delicious, I much prefer this over a nut roast and will definitely make it again.
Don't think the presentation would be good enough for Masterchef though.🤣 The photo doesn't show the true colour.

Hey your meat loaf looks so good Alicia, I love the recipe using chickpeas so I think that I shall make one of these as I love the ingredients and the spicy tomato glaze.

The tomato glaze is lovely and spicy. I also love chickpeas although you wouldn't have guessed🤣.
You’ve sold it to me Alicia. I’m going to make this tonight and put it in the freezer for Christmas. I’ve got all the ingredients (except the sweet chilli sauce). I’m going to make the meat loaf and then make the topping on Christmas Day. No nuts and no lentils so I think this would be great. Also it says it’s equally nice cold the next day. What’s not to love 😋😁🌱
It really is delicious and as you say no nuts but I did add in extra fluid as it needed it, I don't like dry mixtures. I just used chilli powder and tomato puree for the chilli sauce and it worked really well, it certainly made for a delicious topping.
Being able to have it cold as well - bonus.😋.

That's what I was going to make but Ali got me thinking a couple of weeks ago. Ali put up a post asking what we were planning to have for Christmas so I started looking.
I wouldn't say you were fussy as you have posted some lovely dishes, we can't like everything.
I would say with this recipe though is add some veggie stock as it's a very dry mixture. It tastes delicious.😋
