Hi everyone!

What’s your Christmas looking like this year?

I usually do a nut roast but due to having to limit my nut intake I’ll not be doing that and the tiramisu I’m making contains cashews so don’t want to over do it.

I’m thinking of doing big field mushrooms stuffed with home made sage and onion stuffing wrapped up in bought puff pastry. A bit like a wellington. Or I might just do big stuffing balls and lots of veg and miss out the pastry. We will also have a bought Christmas pudding I got from Sainsburys.

On Christmas Eve we have a buffet. For this I usually make sausages rolls with Linda McCartney sausages, a lentil and beetroot salad, coleslaw, vegan cheese and crackers and whatever else I can think of. This year I also have some pickles which I’ve done myself so I hope they will be good. (Onions, quince and beetroot).

I’m going to make a tiramisu for dessert and also a tiffin cake in the shape of a Yule log covered in chocolate for my son. Ha! well that’s the plan.

What are your plans for Christmas??

Well you sound well organised Ali and I bet your sausage rolls are wonderful.

A few years ago I made a nut roast for some friends as their daughter had become vegetarian and they said what nuts are in this and I said guess...I'd forgotten to put any nuts in LOL and it tasted good.

I'm cooking a Christmas dinner with a lentil loaf as my guests are vegetarian and the food will all be vegan. I love making a roast as its all cooking everything cleared up before anyone arrives and apart from that I'll have a quiet Christmas.

Here's the pudding I've bought:

lillypuds.co.uk/lillypuds-s...

So you're having tirimisu and Christmas pud? I guess 2 puddings are better than one...πŸ˜‚

Haha yeah best have all bases covered.

Well at least it tasted good and that’s the main thing. Sounds good to me. The lillypuds look good. You’ll have to let me know what you think?

I love my sausage rolls although I just put them together. Sausages, cranberry sauce and puff pastry. Very nice.

The other thing I like is Christmas sandwiches. With vegan sausages, my stuffing, mayonnaise and cranberry sauce. I’ll look like a little pudding myself once Christmas is over πŸ˜‚

Hi Ali

You are well organised, I'm very impressed.

Sadly I'm the only Vegan, everyone else eats meat. I'm making myself a Vegan Meatloaf which comes under 'Loving it Vegan', the link is:

lovingitvegan.com/vegan-mea...

I'm also going to have a go at Sage and Onion stuffing which I've never made before. For a sweet treat I'll be making some homemade fudge, I'm also tempted to try a Vegan cheesecake. Vegan ice cream is something else is like to try and make, I have an ice cream maker.

Hey Alicia I think that meatloaf looks good. I love the look of the ingredients. Have you made it before. I bet the fudge will be good too πŸ˜‹

Thank you Ali and yes it does look good. I've not made it before so I'll report back once I've made it, I'll be making it before Christmas and freezing it.

Fudge is something I wanted to try.

I recently went on this course ourlizzy.com/christmas.php with my friend and we had a great day! My freezer is almost full now of lovely vegan goodies for the family for the day! I'm making a pithivier as a centrepiece along with a chestnut and cranberry nut roast, yum. I've got some vegan cocktail sausages from Waitrose and I'm wrapping them in This is not bacon from This.... which everyone seems to rave about. Pudding is my usual Christmas pud (a Riverford recipe on their website, but I miss out the egg and add half a teaspoon of baking powder) with soya custard. Can't wait! I've also bought some posh vegan cheeze as a treat by mail order from Fauxmagerie in London. Really pricey but it's only once a year and we don't do much in the way of presents these days, preferring to play games and have lovely food to share. I always use this recipe for vegan sausage rolls as well - I found it on the internet eatingvibrantly.com/vegan-s...

All in all I'm going to have LOADS to eat!

Haha yes you are. What fun!

Sounds like you will be having a proper feast. I’m going to look up the fauxmagerie as that looks interesting.

I remember you said you were going on a course with your friend so I hope it was good.

I think your going to eat your way through Christmas and why not it’s only once a year!
