Hi,

After all those recipes I ended up just roasting it whole in the oven and then cutting it in half, taking out the seeds and tearing the inside with two forks to give the spaghetti effect and putting stir fried kale, onions and chickpeas on top.

My sister rang mid flow hence the recipe being cut short! Even so it was delicious

The squash is delicious. I could eat it every day just with butter and salt and pepper 😋
