The monster courgette

Hi, Just when you think you have your courgettes under control.....last night I was watering my courgette plants and they were all a chunky finger size and then, oh dear, I saw this random courgette hiding at the back!

Phil said he would do stuffed courgette which I have to say I wasn’t looking forward to that much but it was delicious and I had seconds and hey presto the mammoth courgette is no more. We had it stuffed with a lentil chilli and a baked potato. I think sometimes things are nicer when you haven’t cooked them yourself and with some vegan spread and plenty of black pepper it was delicious 😋

So it’s one down and 15 to go! Does anyone have some good courgette recipes. I have made very nice garlic and courgette soup in the past and the secret is to add the least stock or water you can get away with for a tasty cream soup 😋

Yes good ol Phil it was very tasty. Tonight we are having nut roast with grated......you guessed it courgette! 😂

Just had the courgette nut roast. Very nice. I couldn’t even tell there were courgettes in it. Not sure roast anything is a good idea in the summer, I’m boiling hot now 😂🌱

Yummy, funilly enough I don't actually mind hot food in hot weather but a roast is one meal I rarely have in hot weather. Your meal sounded lovely 😋

Absolutely Yummy Ali, I have got a recipe for stuffed courgettes in one of my cookbooks - I will try and find it for you, from memory it was most enjoyable : > - great idea with a jacket potato to - what a perfect meal
