Today I went to the local Farmers Market in the next village along from where I live. To be supportive I bought two pieces of quiche. At £3.00 a piece I thought I’d wrangle out of them how they made it!
Turns out the filling was onion, rosemary, mushroom, broccoli and herbs sausage. Held together by vegan cashew cheese which he said had agar agar in it. It was particularly delicious, including the crispy pastry. He said the cheese sets once cooked so I have included a link to a cashew cheese recipe although it doesn’t contain agar but I think it would still work.
I had mine with a salad for lunch when I got home and it was very tasty so I will definitely give this a go myself.
