Here's a veggie loaf I made today with a tin of pinto beans some white onion peppers cooked veg with chickpea flour 1 table spoon coconut oil ground chia seeds added some water to make a thick batter and I added 1/2 teaspoon xanthan gum to help bind it. I coated in with golden linseeds and pumpkin seeds and sliced tomato.
Xanthan gum is used in GF baking to replicate gluten and its used in mayo's as it's an emulsifier so it binds oil and water so is great in GF and dairy free baking.
Pinto beans are high in iron and magnesium and taste good as well.
I was waiting for some bread to prove and I made this for my evening meal later and baked it all together, so am looking forward to it.
