This is something I often cook and have with a main meal but I also really like it for breakfast and its quick easy and healthy so it ticks the right boxes for me.
I lightly cook the Potobelloe mushroom in olive oil and bake the tomato in my microwave for 1, 1/2 mins
I often use a Portobello mushroom instead of a pizza base as I'm gluten free. π
