Vegan and gluten free...I made these pancakes for breakfast and they were delicious and simple.
I didnโt follow a recipe but what I did was added gf s/r flour, 1 teaspoon baking powder, I teaspoon apple cider vinegar to a bowl. Added some cashew milk and one orgran egg substitute and thought Iโd see what happened.
They are so delicious. I donโt normally make pancakes as not having a non stick pan (I have now bought one especially) they often go wrong for me and I think these are the first vegan ones I have made so I was very pleased that they were so light, fluffy and tasty๐
I poured over some cashew cream I had made that needed using up and a little organic maple syrup.

Hey Ali I see pancakes as wholesome fast food and these look totally delicious to me as I love pancakes and being GF look perfect and with your organic apple even better.
When my son was at school I made some batter the night before pancake day and showed him how to get the pan hot and make pancakes, I came home from work the next day to find he'd eaten lots of pancakes and had managed to get one to stick to the ceiling with exuberant tossing...and guess whose head it fell on later...๐ค
Haha that sounds like fun! I think you recommending the egg replacer for baking is what sealed it. They were so light and fluffy I surprised myself! ๐ฎ
