Tonight we had baked potatoes with onion, fresh chilli, garlic, mushrooms, black beans and cumin.
I put red onion, avocado and fresh coriander on top and made a tahini/lemon dressing. I had meant to put spinach in but it got missed out unfortunately. π€
It was tasty and filling so hit the mark.

Tonight I changed my menu and had fermented tofu stir fried with garlic, pepper, ginger and fresh lemon with roasted veggies ...garlic fennel mushrooms red pointed peppers sweet potatoe, courgettes and carrots. Delish!
