Tonight I made a pad Thai type of thing. After a hot day of painting and decorating I needed something quickly.
I stir fried mushrooms, sweet corn, onion, peas, red pepper, homegrown yellow courgette and spinach, and ginger with a tiny pinch of Chinese five spice. Then when that was cooked I made a sauce with passata blitzed up with garlic, chilli, tamari and a little peanut butter. I stirred the sauce into the vegetables until heated and served with gluten free rice noodles and a sprinkle of peanuts. It was so tasty I even surprised myself! 😳
I think it might even be gluten free? 🥢
