This is a variation of a similar pie only this time I used rhubarb strawberries, chia seeds and added ginger as well and that gives it an extra bite the chia seeds really thicken the fruit.
The topping is ground almonds with GF plain flour, sesame seeds, coconut fat and coconut sugar and sprinkled flaked almonds on top. I love the added taste from the coconut fat as well. (Use half fat to flour/nuts and half sugar to fat)
I used 2 packs of rhubarb as it was on offer so to me this is both healthy and hits the mark. The photo shows how chia seeds thicken the fruit. π
