I am a vegan and in fact I follow a whole food plant based diet which is vegan but with out processed or junk food...or added salt, oil or sugar (the clue is in the initials, SOS). I also have SIBO which I contracted after food poisoning eating meat in 2013...yes its taken that long to find a cure!!
I am a regular gym goer and so I track my macro and micro nutrients via the Cronometer app and regularly see fibre consumption of 75 grams per day...well above the 30 recommended by the NHS and I suspect even this is optimistic for those on the standard western diet!
Looking back over my food entries I see that Jumbo Oats are the biggest fibre contributer with over 7g per cup of raw oats. beans like chickpeas are also full of fibre, and protein! All the leafy greens like Kale are high in fibre and low in calories too.
SIBO is a specific type of IBS in the small intestine for those who do not know. I suffer too with high FODMAP foods, which is challenging as a vegan! I also have non-celiac gluten sensitivity but the oats I buy are gluten free and I use tinned lentils and chickpeas which although they lack some of the flavour of fresh legumes are much lower in galacto-oligosaccharides (GOS) which leach out during the cook in tin process. Rinse them well as GOS is water soluble I believe.

Hi a I have IBS D and the best fibre is soluble fibre, whether you have D, C or mixed!
You can purchase Heather Von Vorous’ Tummy Fiber online or do what I do, which is to add a teaspoon each of milled flaxseeds and chia seeds to my morning porridge.
The seeds must be milled otherwise they just pass through you. The idea is that soluble fibre creates a soft “gel” with the stool so making it hold together for IBS D and be passed easily for IBS C.
Google soluble fibre foods and you’ll get a list, oats a really good too.
Just start slowly and gently and build up to what works best for you.

I like Benefiber. It has no taste. Mix a heaping tablespoon in my coffee every morning.
