LEMON CHICKEN RECIPE
Tangy Lemon Chicken With Mushrooms
Citrus adds freshness to this easy chicken recipe which produces a light, zesty sauce. Perfect with noodles, or serve with grains such as bulgar wheat or cous-cous.
Serves 6: 6 chicken thighs, a little olive oil, 200g (1 cup) baby onions or 2 medium onions quartered,1 level tbsp plain flour 200g (2 cups) mushrooms, sliced, 175ml (3/4 cup) chicken or vegetable stock, juice of 1 lemon.
Using a little oil in a non-stick frying pan, brown the chicken thighs. Remove from pan, add a little more oil and brown the onions. Return chicken to pan, sprinkle over the flour and stir around to coat.Add sliced mushrooms. Pour on the lemon juice and hot stock. Season with salt and pepper. Bring to boil, then reduce to simmer. Cover and cook gently for 30 minutes until chicken is cooked through.
Cantaloupe-Lime Frozen Margarita
Less sugar and more melon rescue this lovely 'rita from diet purgatory, shaving 143 calories off the classic.
INGREDIENTS
1/4 cup sugar
4 cups cubed cantaloupe
Zest and juice of 1 lime
1/4 cup fresh mint leaves, plus 4 sprigs for garnish
4 oz tequila
1 lime, thinly sliced
PREPARATION
In a small saucepan, bring sugar and 1/2 cup water to a simmer over medium heat, stirring, until sugar dissolves, 30 seconds. Set simple syrup aside; let cool to room temperature. In a blender, process cantaloupe, zest, juice and mint leaves until smooth. Stir in syrup and tequila. Freeze, stirring occasionally, until a thick slush forms, at least 2 hours. Pour into 4 glasses; garnish with mint sprigs and lime slices.

Right Pete see you got a new job.( head of pcs.) When I post recipes from the previous day they all have my name on them. Where in fact some were Emjays. Only thing I can think of is to copy , paste and post your own recipes. Any ideas. I also think may be keep them on site for a week then every Monday morning start a new batch. What do you think ?
Aup Jillygirl, yes i see what you mean gal, erm maybe it would be best t have a blog on the questions side, like you said once a week, because they dont seem to move down much on that side, and perhaps it will stay there all week then, if that makes sense to you
CURRIED SCRAMBLED EGG,POACHED HADDOCK AND SPINACH
Preparation time: 15 minutes Cooking time: 15 minutes Serves: 2
Ingredients
6 British Lion eggs
200g baby spinach, washed
200g smoked haddock
2 tbsp vegetable oil
2 cloves garlic, finely sliced
1 tsp mustard seeds
1 tsp grated fresh ginger
2 tsp medium curry powder
Fresh coriander
1 red chilli, finely sliced
2 lime wedges

Method
Half fill a shallow sauce pan with water and place onto a medium heat. Add the smoked haddock (we've used dyed haddock but you can use undyed for equally delicious results!) and bay leaves and bring to a simmer before turning off the heat. Leave for 4 minutes or until the fish has turned opaque. Remove the fish from the water using a slotted spoon, flake the flesh from the skin and break into large pieces. Leave to one side.
Heat the vegetable oil in a large non-stick frying pan. Add the mustard seeds, allow them to toast and cook until they start to pop - this will release the flavour from the seeds. Turn down the heat, add in the garlic and ginger and cook for 2-3 minutes. Don’t allow the garlic to burn as this will make the final dish bitter. Add the curry powder and a pinch of salt. Cook for another minute before adding the spinach. Stir well and allow the spinach to wilt. Season generously with black pepper.
In a large bowl, beat the eggs well. Once the spinach has completely wilted, turn up the heat and pour in the beaten eggs. Stir with a plastic spatula until the eggs are well scrambled.
Just before serving, fold in the cooked smoked haddock. Don’t allow the flakes to break up too much.
When ready to serve, tip the curried eggs onto a big serving platter. Scatter with the fresh red chilli, lots of coriander leaves and a wedge of lime each.
: This is a perfect carb-free meal! Incredibly tasty, quick to prepare, cheap to buy and above all else...healthy!
