I take other medication as well as Omeprazole should I make sure I take my other medication two hours before or two hours after taking my Omeprazole

I wondered about this some years ago, so I rang my local pharmacy to ask. They said it wasn't necessary for omeprazole or other meds that work the same way. But Gaviscon should not be taken with other meds.

The instruction leaflet with the medication is something that you should read. It might just depend on whether it comes in the form of delayed release capsules or not. I think that technically there is an advantage about taking it first thing in the morning, but I am not sure whether that applies to all forms of Omeprazole, and many people will have been given specific instructions by the hospital doctors.

Having Omeprazole after an oesophagectomy probably puts you in a slightly different category from people taking Omeprazole for other reasons. It might be worth asking your pharmacist.

The other thing to think about with all medication is that your digestive system is shorter after an oesophagectomy, and there is not so much time for medication to be absorbed into the body from the digestive system, so delayed-release pills might be a problem. Sometimes liquid versions will be better for you. Again, this is something that pharmacists will know about.
