I am at home for a few days with my folks who I love to cook for when I come back for the holidays. Last evening it was salmon fishcakes on the menu and a Mary Berry vegetable dish made with Savoy cabbage, one leek and a big handful of spinach. Heat some butter, then add in the chopped cabbage and leak, cook for a few minutes adding in the spinach last with grated zest of one orange along with the juice from the orange. This accompanied the homemade fishcakes beautifully. Serve with a spoon of capers! Delicious!

Fabulous! Let me know how you like it. For the fishcakes as my Mom is gluten free I make them with organic potatoes, wild salmon and a lot of freshly chopped parsley. Then beat an egg and put on a plate along with some ground almonds, roll the fishcakes first in the egg then coat with the almonds and pan fry. Yum!
