That would mostly depend on your potassium levels. If they are high, not much, if normal then still not all that much. How much do you want to eat?

Questions like this is why going to a dietician is so important. My BBF could not live without potatoes, so I get it if you love them. But they are not great for late-stage CKD because of the potassium. If your potassium is up there, stay away from them. If not, then enjoy them. They are high in some really good vitamins. But they are also carb bombs and can raise your glycemic levels if you are diabetic. This is why a certified dietician could help you.

Moderation is key. You don't need to E-liminate, just limit. Say once a month. Be sure to peel, cube then boil to remove up to 70% more potassium than just soaking. You can still enjoy foods you love, just limit them over time. Blessings

Leaching gets rid of other essential nutrients too, so rather pointless.

Leaching is the old method. Peeling, cubing and boiling (without soaking) is the newer (15+ years) recommended method. Blessings
