My family doesn't celebrate Lent, but in a traditionally-Catholic region this is the start of the Annual Fish Frys! I'm not sure if it's regional or not, but it's how our VFD's make money for the coming year. Unfortunately, most of the frys have shut down due to Covid and rising costs.
I won't be leaving the house today (we're being pelted by little ice balls at the moment), but on Friday I plan to grab a fish sandwich and a large helping of haluski!

Basically, haluski is just cabbage, egg noodles, and lots of real butter. There are slight variations depending on what part of Eastern Europe your recipe came from. I don't know the history, but it's very popular around Easter in my area.
