Greetings to any and all persons who may read my bio and be encouraged by the continuous love that God provides in a time of medical crisis.
In no way do I intend to disparage the talented and dedicated members of the medical profession.
I am into predictive and preventive medicine. As a patient I want to search out those therapeutics which will benefit my continued health both emotionally and physically.
Additionally I have a diagnosis of ADHD which presents its own spectrum of emotions and behaviors.
Since contracting COVID I have struggled with very reduced energy, mental fog and phlegm from my sinuses. This summer I have benefitted from sunlight, various supplements and I am finally returning to a new normal as my joints have gradually become more flexible. I regularly prepare chicken soup using the following recipe:
1 package of skin on chicken thighs purchased frozen. In a crock pot or large cooking pot on the stove heat six (6) or more cups of bottled or tap water.
Thaw the chicken thighs enough to remove packaging. Place thighs into the crock or pot carefully.
They will thaw completely in the hot water. Bring to slow rolling boil testing the internal temperature of the thighs until thermometer reaches 165-degree Fahrenheit. I find that the "high" setting on a crock pot will suffice, but additional time brings out flavor and fat thus thickening the broth. I add Knorr's Chicken Seasoning to flavor. Vegetables can also be added especially frozen packages of mixed vegetables. Enjoy!
