Tonight I made Butter Chicken and wanted to serve veggies with it so I stir fried some with garlic and a mix of Indian spices. I also made a simple raita and served it with steamed rice.
I wish we could send aromas through the forum as the kitchen smelled amazing.

Hey Kaz your butter chicken dish looks and sounds fantastic I bet it smelt good and tasted even better. This is a wonderful collage. 🌈😊
I used a sauce base from a local gourmet shop for the Butter Chicken which I added to fresh diced chicken (easy peasy).
The spice mix for the stir fried veggies was: salt, pepper, cumin, Tumeric, Chilli flakes, Cayenne pepper, cinnamon and fennel seeds. I put a couple of tablespoons of olive oil in the wok, added a couple of teaspoons of crushed garlic, then the spice mix which I stirred for 20-30 seconds before adding the onion, carrot and cauliflower. About 10 minutes later I added the broccoli then about 5 minutes later added the capsicum.
The raita was - Natural Greek yogurt with a dash of lemon juice, a sprinkle of Cumin and finely diced Lebanese cucumber (without the seeds), finely diced red onion and finely chopped fresh mint leaves.
I rarely measure things and I’ll often look at recipes to get an idea of flavour combinations and then, depending on what I have in the house, I make up my own recipe. The only problem comes when my husband says, “that was delicious. Can you make it again?” The next version could be hit or miss 😃
