You would have to ask for something with no soy sauce and so would probably need them to make a separate dish for you. Given that the traditional preparation techniques for chinese food is to chop all the veg first and then cook to order it shouldn't be hard for them to make you a veg stir fry that is safe but remember to ask for a pan that hasn't been used for anything else. Have that with rice or rice noodles. Add tofu if you like but make sure not coated in wheat flour to make it crisp. The usual thickener for sauces is cornflour so that is ok. Ask to see the ingredients on any sauces they want to put in - you could even take your own bottle of gf soy with you to add falvour is you like. I find Sanchi Tamari gf soy suace (just buy in supermarket) is fine.
If there are going to be lots of you it might be worth phoning the restaurant first to let them know you will need special help - especially to make sure they know how important avoiding contamination is and that the right food needs to be cooked and then actually make it to your plate.

I find that msg is a problem with Chinese
ask for rice noodles and veg with maybe some chicken, my local one does that for me, no sauce but tasty. I use gf tamari when I can get it.

Be careful, many rice noodles also contain wheat. You could ask to see the package for the ingredients, some resturants will do this for you.

Talk to the restaurant, ask them to ensure they use no soy sauce, hoi-sin, oyster sauce or fish sauce. Ask them also to cook it in clean pans. I usually ask for a simple meal, such as chicken with cashew nuts/beansprouts and plain boiled rice. If they're a good restaurant they will understand and deal with it, if they struggle, take your own food in!!!
Avoid also things like crispy aromatic duck as it is often marinated in soy (unless they tell you otherwise).
