Hya Ben, this has come up before on GFG and is a contentious issue as there's little or no research in the UK about it. Many of us can not tolerate coffee and many are fine with it. Here's a link to a blog by Fiona on this:

Actually, there is another possibility... I run an independent coffee shop and one of the products we were offered to 'clean' our grinder was, believe it or not, wheat grains. The idea is that you run them through the grinder to clean it out of coffee oils from time to time.

I was horrified, because I was worried this was an essential part of the maintenance that I would not be able to do, because there is no way any wheat or gluten is being allowed into any production process in my shop, but was reassured this was purely optional, so I've steered well clear.

However, it could well be that other places are using this stuff quite innocently, not realising just how much harm it could do the coeliac customers.
