I'm constantly amazed at how beneficial some foods can be and herbs and spices seem to have some amazing healing powers.
I also wonder how well we digest food eaten whilst we are walking as I often see people eating on the move and don't think that is very good for the digestive system so I think it's not only what we eat but how we eat.

Well, I think what is absolutely shocking is the way that lunch breaks are constantly being erroded with many now having as little as half-an-hour or twenty minutes - so short a time that they cannot leave their working space. School children are not fairing much better either. I have heard of some people saying that they work through their lunchbreaks. So digestion is set to get worse if anything, I think.
I have come across a very aggressive article today - some pieces are similar to other articles that I have read and it offers a reminder to us all about balancing our omega 6 and omega 3's - well here it is:
An interesting article very challenging to the present school of thought but with all the ongoing issues that many coeliac seem to have maybe we need a new school of thought.
The other interesting thing about this article is what it says about phytates these are anti nutrients and we used to know how to prepare food to minimise this effect. Like washing quinoa to get rid of the saponins.
Two interesting things about phytates is that supermarkets make bread and customers love the smell? but they don't have time to let the bread prove so they pump it full of additives including phytic acid so it rises in 60 to 90 seconds while the dough is on the conveyor belt to the oven, It is phytic acid that makes soya beans indigestible unless soaked and cooked.
Oats are one of the worst grains for phytates and oats should also be soaked and cooked to nullify the phytic acid. And we have muesli which contains uncooked oats so muesli stops our bodies from absorbing the vital minerals that we eat them for!
Hi guys, interesting article and I also found the comments of lunch time interesting. I work in a primary school so I see 2 sides of lunch. Firstly the children, we have to basically rush the children through their lunch, we have to get over 400 children through in 1 hour, so we do end up rushing children's dinner - which is obviously not good. Then as far as staff go we have 30 mins for our lunch, but this includes the time it takes to get out of the classroom - easier said than done, and also getting back to class. So basically it's a race to inhale as much food as you can.
I am starting back in September after a nice break, and have been enjoying leisurely lunches. I also face the battle of getting my co-workers to understand what being coeliac means - especially my head. Schools are not the friendliest places for stomachs!
