Just a thought, but I'm wondering, with Shrove Tuesday fast approaching, if anyone has a tried and tested recipe for gluten free pancakes. I'm dairy free too, but I don't think that would be of concern, since nut or soya milk is usually interchangeable with dairy milk in other recipes. Here's hoping!

Pancake recipe?
Make them as normal recipe but just use a gluten free plain or cake flour not a flour for making bread, I mostly use a schar flour called " Farina" which is especially for pasta, pancakes and sauces, or you can make them with buckwheat flour but they have a different taste so you may not like them.

I love pancakes and have made many. Here’s 2 recipes for you.
You can use a traditional Good Housekeeping pouring batter recipe which works well - just substitute gluten free plain flour.
4oz plain flour
1 egg
Half a pint milk or water
Pinch salt
Tsp sugar (optional)
Whisk together.
I find this works best if made the day before and let sit in fridge overnight.
And my personal recipe using gluten free buckwheat flour:
To make about 4 pancakes,
2 eggs
2oz gluten free Buckwheat flour
2floz Good Hemp milk (or any dairy free alternative)
Quarter teaspoon bicarbonate of soda
Dash of lemon juice
Whisk together. Ladle in pan and Flip when bubbles form.
I also use this recipe with gluten free plain flour to make crumpets!

We use the banana pancakes recipe from BBC Good Food site, could not be simpler and is a lovely pancake for sweet toppings. Just banana, eggs and baking powder.
