I spoke to my GP to discuss the possibility of a false negative/IGA deficiency (a private test I did for something else suggests I'm not capable of producing IGA) but my GP seemed to think there are no other tests available.
To be honest, I think my GP thinks I'm a crackpot for continuing to query this because they seem to think that the chances of false negatives on the IGA test are negligible.
It doesn’t look as though you need to be eating gluten. This article explains the link between IGA deficiency and potential health problems including coeliac disease. It does suggest that if you are IGA deficient then you should be tested for Coeliac disease, so eating gluten would be necessary in that case.
