I have been there last year and all went well. I sent an email in advance to make sure they were aware and ready for me. I stayed in riu club vista mar which is an all inclusive o only type resort and Word recommend it. Each meal I would meet the room supervisor and hectares would guide me through the buffet and tell me what was safe to eat. At breakfast they had a separate plate for me with bread slices and a Madalena duly wraped, for example. I even got a cook to make me a special dessert since ice creams and such were not gluten free when o asked him about it. The only downside was the pool bar which only had Hot dogs and burgers, no gluten free options there. But once i missed Lunch hour and they cooked me some grilled chicken breasts there. Personnel was very friendly and helpful, i have to say. . .
I would venture saying that all major hotels there have a good understanding of celiac needs but send an email beforehand and look for other reviews.
Hi, friends of our have gone back this year to Gran Canaries to Playa del Ingles, Sandy Beach Hotel. There they have all food for Coeliacs!
We visited quite a few of the islands and had little problem, they even did a gluten free option in McDonald s (we went in to use internet) take a translation of gluten free and enjoy

Only done B&B in Lanzarote - Breakfast was quite manageable and eating out was easy - Cyprus is a bit more complex because they have a very heaviily based bread and pasta based diet (nicer location though lol)
Good luck - personally unless you can guarantee for coeliac - save staying in the middle of nowhere - I'd go B&B and you will find plenty of places to eat out for sure
