Hi Eggardon, thanks for posting this it is very interesting, I love the analogy of coeliac specialist and the blind men and the elephant!

I also miss interpreted when they said that the average American ate 0.8gm of gluten per day and thought they must eat more wheat than that, so I did a web search and found this about who eats the most wheat in the world and was surprised that it is the Tunisians.

I guess that this article shows what many of us as coeliac know and that is that wheat and gluten affects us in many ways and the experts are still unravelling it all.
