Hi,

Struggling to understand how the recipes work and what I should pick. If I'm in the green is it ok? and also struggling to understand some of the names used for food as I'm from Uk. What are animal crackers and powdered sugar. I'm assuming powdered sugar is icing sugar. I can't find any similar sites like this in Uk. Help lol

Okay, where to begin? Powdered sugar is just that. It's powdered. Its primary use is as a confection. The icing is sugar in a different form for cookies, cakes and some donuts, to name a few. Animal crackers are just that. Crackers in the shapes of various animals. Or its the name of an old Marx Brothers movie.

As far as what to pick goes, pick what sounds good to you. Know your labs. If you need to watch your potassium pick recipes with low amounts of potassium. If you have to watch your sodium, pick recipes with low sodium. This is where a Renal Dietitian can be a huge help. By showing them your lab values they can see where your numbers have been and any trends developing and steer you away from some foods that are not kidney-friendly for you. I watch all of my ingredients. For example, if a recipe calls for tomato sauce, which I can't have, someone suggested I consider pureeing roasted red peppers and use that in place of the tomato sauce. It works for me.

It's been over 45 years since I spent any time in the UK. First trip there in 1972 we stopped at a pub for a meal and they had a special on Bangers and Mash. I didn't have any idea what that was but decided to try it. Mashed potatoes, onions, gravy and sausage. That's what I saw, ate and enjoyed. I miss it now because I can't have sausage. The potatoes can be leached and made doable for a kidney-friendly meal. The onions are okay but the gravy and sausage need replacements and I haven't figured out what to substitute.

Not one of the DaVita recipes should be taken at face value. Make adjustments for your needs and go from there. Once I get one of their recipes adjusted for me, I copy and paste it into my file and then make the best changes of ingredients that make it okay for me and print them out on recipe cards for me to use. I do that because having my computer in the kitchen is not an option.

Thank you for such good advice. I did notice some of the recipes have extra added salt in them which I don't add salt anyway so will tailor them to my needs

Yes I adore bangers and mash with onion gravy but it doesn't adore me.Just before I was diagnosed I was tucking into mash and Swedish meatballs (like sausage and very tasty) in ikea whilst shopping. I'll be having the fruit plate next time 😂
