Uric acid is a chemical created when the body breaks down substances called purines. Purines are found in some foods and drinks, such as liver, anchovies, mackerel, dried beans and peas and beer. Avoid such foods.
In humans, purines are excreted as uric acid. Purines are found in high amounts in animal food products, such as liver and sardines. A moderate amount of purine is also contained in beef, pork, poultry, fish and seafood, asparagus, cauliflower, spinach, mushrooms, green peas, lentils, dried peas, beans, oatmeal, wheat bran and wheat germ.

Dietary causes account for about 12% of gout, and include a strong association with the consumption of alcohol, fructose-sweetened drinks, meat, and seafood. Recent studies have found that other dietary factors once believed associated are, in fact, not, including the intake of purine-rich vegetables (e.g., beans, peas, lentils, and spinach) and total protein. The consumption of coffee, vitamin C and dairy products, as well as physical fitness, appear to decrease the risk. This is believed partly due to their effect in reducing insulin resistance.
The occurrence of gout is partly genetic, contributing to about 60% of variability in uric acid level.
Gout may run in families. It is more common in men, in women after menopause, and those who drink alcohol. People who take certain medicines, such as hydrochlorothiazide and other water pills, may have higher levels of uric acid in the blood.
The condition may also develop in people with:--

* Kidney disease
* Obesity
* Sickle cell anemia and other anemias
* Leukemia and other blood cancers
