Defrost first then roast in oven on a rack prick skin wit a fork to release the fat and drain off the fat at regular interval. Keep the fat to roast potatoes in .

Put an apple inside to sweeten the meat.

I usually tear out fat from under skin on breast before putting in oven and sticking with fork occasionally to release melted fat as Carrigan said.

Orange or cherry sauce are good companions.

I cooked a goose for Christmas once for a change from pork roast (pernil) . Maybe it was a duck. I remember basting it with hot water instead of butter as for turkey. One year we had turducken ( a gift to my daughter). happy holiday

Heehee!! My husband loves to make those kind of jokes too!! He always asks the clerk at the chicken shack if they have any dead chicken there!! They give him a look that is too funny!!
