I have always loved Spin / Studio Cycling Classes, I cracked the swimming discipline. Now for the running, which should be the most intuitive, but I haven't done it. C25K is now on the table.

Welcome to the forum and well done on your decision.
This guide to the plan is essential reading healthunlocked.com/couchto5...
and includes advice on minimising impact, stretching after every run, hydration and strengthening exercises, all of which will help.
Enjoy your journey.

Seems you have a great level of fitness to carry you through C25K! Even though you have a great level of fitness, I suggest following the plan from beginning to end in order to build up your joints etc for the rigours of running.
Happy running!
