Your post is a little cryptic. Could you tell us who ‘he’ is and a little more detail please.
Is this your husband who is on ‘Watch & Wait’ with a WBC of 48,000 and you’re wondering what kind of foods he should eat?
Of course he should have an ice cream (unless he’s diabetic or lactose intolerant) of course! A sensible balanced diet is best and as much exercise as he can manage.

Newdawn has already given you the advice that is pretty standard - a balanced diet and exercise. Anything that improves overall health is good, but there are no magic foods or approaches to dealing with this diagnosis, and a few indulgences can do wonders for our overall mental well being.
The only advice I would add is to be sure that "he" is seeing a hematologist familiar with CLL if possible. You don't mention your location. If you add that in a post introducing yourself and giving a few details others here will be better able to advise you while considering the realities of the medical system in your country.

I never had restrictions on diet. Everything in moderation.
Does he see a CLL expert or hematologist oncologist? What tests has he had and what are his markers? Hopefully he will be on Watch and Wait (W&W) for many years. I had no symptoms for many years. Just go on and live life and keep up with check ups.
