not sure if this is allowed but I would love some meals inspiration. Trying to eat well balanced, low salt, high protein - lots of fish, chicken etc but needs some ideas for quick easy meals. What are your favourites please - or are there any good books/sites that might help

I batch cook things like creamy chicken in sauce type dishes and stick them in the freezer as ready meals. It means I can always have a healthy option ready at short notice. I just cut the salt out of the recipe, and swap butter for olive oil etc. I also cook up batches of lean mince into various different things and freeze it - can be served with jacket potatoes, homemade potato wedges or tortilla wraps.My husband actually loves cooking and has taught himself how to make a healthy curry. Again, using olive oil instead of ghee, lots of vegetables etc. I think the spices are good for replacing salt cravings, and natural ingredients such as ginger, garlic, turmeric etc are thought to have benefits to the general health in the body.
My main staples are chicken and turkey these days, but to keep variety in my diet I often try out plant based protein for a change. A really nice one was given to me by a veggie friend is BBQ lentil balls. Dead easy to make. I throw mushrooms and onions into a pan and fry off in some olive oil. Boil the lentils (not red ones)separately until cooked. Then throw the mushroom mix and lentils into a food processor with some fresh coriander and blitz to a crumbly texture add an egg and give it a quick mix and season to taste. Form tightly into little balls about the size of a golf ball. Put on a lined baking tray and cook in the oven for about 10 mins. Meanwhile make the bbq sauce, put some tomato purée into a pan, (watch this as there’s salt in them - the cheaper ones have a lower salt content I find), add some garlic and finely chopped onion which have been lightly fried in olive oil, white vinegar, honey, chilli powder, Worcestershire sauce and if you’ve fruit needing to be used up like blueberries, or pineapple or even a handful of raisins add too. Add some water and cook through until you have a sticky constituency. Put the sauce and balls into a frying pan and coat and warm through. Plate up and sprinkle some coriander over. They are really nice and can be batch cooked and frozen.
I found this free eBook looking for some recipes to cheer up a friend who had just been diagnosed with pancreatitis, and my partner who has cirrhosis pretty bad though they looked nutritious and tempting for him. There are some very nice ideas. There might be a tad too much salt, but bearing in mind the recipes are generally for 2, 4,or more servings the sodium is spread quite thinly. It is nice to see a selection of tempting meals to share rather than special meals for the sufferer.
PS I'm sure you know, but in the recipes that specify Kosher salt there is nothing special about that from a cook's point of view. The usual salt from a UK supermarket does the job.
Hi, I made chicken kebabs this weekend. Chicken mince, fresh chilli and lime juice. Served on flat bread with salad, potatoe wedges and homemade coleslaw. I use home made salad dressing to make coleslaw. (Runny honey and mustard powder dissolved in one part white wine vinegar to three parts olive oil) roast the potatoe wedges after coating in olive oil and paprika to taste. Also greek yogurt with diced cucumber and chopped fresh mint as a dip. It meant the whole family ate together.
