So last week at some point, I took my last pump with my fostair inhaler.. and I had been drinking so complete forgot the next day to change it. Fast forward to this morning and I realise I’ve been taking an empty fostair pump. Anyway so not sure if it’s related or not but my throat and chest is really sore, chest moreso when I breath in. Could it just be a virus? Thoughts? Should I also take some extra fostair for a few days to bring up my protection?

No point in taking extra. Just get the inhaler asap and get back into your normal routine, and you should be ok. I doubt if it's a virus, but only a doctor could tell you. Fostair controls the inflammation in your lungs, so stopping it means they are going to trouble you. You might make a note in your diary for about a week before it should need to be renewed!
Be careful with booze and fostair, seem to recal that the patient information leaflet that comes with fostair contains a booze warning, so you might want to have a read of it.
I used to be on Fostair and mine had a counter to indicate how many doses I had left.
