wooooooow big guy. Yea that’s great method on the road too. I hate it when the entire 3rd floor at the Fairmont ( S.F. ) is beating on my door complaining about the thick smoke from my hibachi grill when I dump on the damp hickory wood chips for flavor. Just don’t appreciate a private chef’s touch in a hotel room, where they have a 4 star restaurant. lol this is idea for us guys out QOL’ing on a budget or in locations without eating resources.
I wanted to ask about that .. did you carry a water bath with you and I think you are using a crock pot cooker , like I have, for the water bath and did you vacuum pak ( for marinade - sous vide ) the ribs at home ….. or take your food saver with you and buy ribs locally were you stayed for freshness or ? I can see prepping the ribs at home with the food saver …and bring the crock pot, but getting meat in the city might get you fresher - better cuts of meat. Mannnnnn …. The “ on the road “ food lust possibilities are brain numbing and saliva generating. 😂😂😂
Hi, I brought a stock pot with me, the ribs were still a bit frozen. Peeled the membrane off and generously doused the ribs with the rub, rewrapped it and left it overnight. I sectioned it into 3 sections and put into freezer bags - haven't got a vacusealer yet. I set it up in the bathroom and opened the window. Boy, that yum yum smell that wafted into the room was decadent.
hummmmmm …. That cooker pan kinda looks like you are cooking hash oil in the bathroom of your motel room. ( whatever that looks like, I prolly saw it on the web or sumptin lol ) I had forgotten that you still use zip lock bags. Ryte on. If it’s not broken, don’t fix it … right.
Well my brothern, this clearly shows and demonstrates the methods of a well seasoned traveler that wants better food than fast food. Any of the brothers or sisters here that travel with epicurean taste buds or on a budget ( or both ), ....or just plain tired of fast food ….they need to write this down and keep it handy. Definitely up tempos a QOL experience on the road. My hat off to you brother , very kewl. You still da mannnn. Love it.

I had the list .doc saved for years and it was just a matter of choosing something to fasten it to. I can't imagine someone breaking a Memorial with dozens of names on it
