Yes the folding and acetylation of the chromatin material is part of the epigenetic process of regulating genes. It also is protective and participates in stabilization and DNA repair mechanisms in normal cells. I do not know all of the cellular biology involved. But it does involve the Sirtuins such as SIRT 1, 2, and 7; down regulation of mTOR and up regulation of AMPK pathways.

These can be enhanced by various mechanisms including intermittent fasting, ketogenic diets or calorie restriction, high-intensity interval training (HIIT), cold exposures, and the medication metformin.

There is a pretty good review of the mechanisms in David Sinclaire's book on aging: "Lifespan". His "informational theory of aging" is intriguing.
