After the rain yesterday, the air is fresh and the sun comes out as if new life is blossoming even on these cold days. πππ
I had some red lentil penne leftover so I decided to bake with broccoli and herbs seasoning to make another dish out of it. I love avocados and cashews so I made the sauce to go with the dish. π
Main ingredients for avocado cheese sauce:
1. Soaked 1/2 cup of cashews for 30 mins.
2. Blend 1 ripen avocado, cashews with 3/4 cup of cashew milk, apple cider vinegar, turmeric powder, paprika powder, garlic powder, black peppers/salt, dehydrated onions, and nutritional yeast.
3. Toss baked broccoli and red lentil penne with mixture and ready to serve.
I like to garnish with freshly sliced avocados π₯ or tomatoes π I enjoy this wholesome meal so much with Lavender flower tea as my tea choice of the day in this chilly weather. π
Dessert is one crispy red apple as my mom loves to share plenty of fruits and veggies with me. My parentsβ new hobby now is growing Vietnamese spinach as they want to have more organic green fiber in their diet. ππ
