Today I made gluten-free pumpkin muffins to enjoy with warm cinnamon pumpkin cacao coconut milk latte. ππ
12 Gluten-free Pumpkin Muffins Recipe:
1. Mix: 2 cups of gf oat flour and 1/2 cup of almond flour, 1/2 tbsp baking powder, 1 tsp baking soda, 1 tbsp of cinnamon powder, 1/2 tbsp nutmeg.
2. Flaxseed egg (add water to 1 tbsp ground flaxseed, let it sit for 15 mins)
3. 1 cup of pumpkin purΓ©e, 1 cup of coconut milk, 1/4 cup of melted coconut butter, 1/2 cup of maple syrup, 1 tsp of vanilla extract.
4. Blend well all together, add cacao chips, and walnuts at last. Add more milk if the content is too thick. I find silicone mold is perfect and reusable, no need for coating with butter or oil. Baked at 375F for 25 mins.
These muffins came out perfect, ready to enjoy with pumpkin latte. ππ
