Friday/Weekend Meal: Gluten-free Plantains with red lentils and mixed Veggies Lasagna πŸŒ±πŸ„πŸ₯§πŸ˜‹β€οΈ

Hello everyone, hope you have a good Friday and a wonderful weekend ahead! πŸ€—

For today and weekend meals, I baked lasagna made out of sliced plantains with veggies fillings, top with crushed walnuts and cheese sauce. πŸ˜‹

There are 3 steps for this dish:

1. Fillings: sautΓ©ed 1/2 cup of red lentils (boiled separately first to tender texture), onions, garlic, ginger, bell peppers, mushrooms, diced baby tomatoes, crushed walnuts and tomato paste. Spice used: ground cumin, chili powder, oregano, apple cider vinegar, salt and pepper to taste.

2. Plantain: I used 4 ripe plantains, thin sliced and coated with maple syrup and sprayed avocado oil in air dry oven first. ( I love these so much can eat by themselves. 😁)

3. Cheese sauce: homemade cashew milk, miso paste, apple cider vinegar, nutritional yeast, dehydrated onion, garlic powder, a bit of salt and starch for thick paste.

Layer prepared plantain slices in place of lasagna sheets, add fillings to 3 layers I made. Baked at 375F for 30 mins and ready to serve! This is perfectly reserved in refrigerator for 3 days.πŸ˜‹πŸ‘

The first time I tried plantain in a Peruvian restaurant and I fell in love with it. They cooked in black bean sauce and rice in a banana leaf. I think I’ll make it some time soon. 😁 I’m so glad I made this combination, so savory. πŸ˜‹πŸ‘

Hi Happyman4, Yes it’s so good trying out this way using plantain as lasagna sheets. I would think plantains are popular over there. πŸ€” They sell all year round here.

You are absolutely right they are delicious when frying like chips but I altered the cooking way to not use too much oil, still good though. πŸ˜‚

I’m surprised you couldn’t get more fruits because Thailand has perfect weather for it. I hope you can grow these again soon because they are so yummy.

Lasagna sheets are good too, I just like to try non traditional way. Ohhhh how about zucchini sheets? πŸ˜πŸ‘

Now you just reminded me that I think it’s called wax banana also in VN. It’s much smaller, the skin is thick and you can boil it too, there’s honey inside the banana. πŸ€”Hmmm I didn’t know London is so popular with imported fruits which is great. Thai bananas: are we talking about the baby banana? So sweet and very vibrant yellow color almost like turmeric color? I love those can eat 3 of them. πŸ˜‚ Gosh if we speak about fruits, nothing can compete with Thailand, I just don’t know how they can have many many fruits so sweet and yummy, Thai tamarind is my fav too. When I was in VN, we had to go to supermarket (not regular open air market) to buy imported Thai fruits and they did charge much more ofcourse. When I traveled back to VN like 5 yrs ago, I ate nothing but fruits such as mangosteen, custard apple, star fruits, durian, jackfruits, bon bon, rambutan, lychee, longan…. Oh my so yummy to think about them. πŸ˜‹πŸ‘

Thank you for showing me new plantain shoots, looks like you got at least like 6 of new shoots coming out. They do look a bit small but healthy looking. I had no idea they could grow so big with a lot of leaves can be quite taking up too much space and not so many fruits. That would be frustrating for sure.
