Wednesday Lunch: Coconut milk infused purple rice with veggies🌱πŸ₯₯πŸ„πŸ«‘πŸ…πŸ˜‹β€οΈπŸŒΊ

Hello everyone, hope you have a wonderful midweek so far! πŸ€—

Today I made coconut milk infused purple rice with a mixture of shiitake mushrooms, bell peppers, baby tomatoes, red onions and garnished with plenty of pomegranate seeds. Everything is seasoned beautifully with variety of herbs as usual. πŸ˜‹πŸ‘

I got today meal cooked so I can later on move to prep my batch of gluten-free Vegan Mooncakes to gift to all my friends and family this weekend. Everything in this cake needs details and precision as well as designs for presentation. πŸ˜πŸ‘

My parents shared lots of pomegranates from their friend’s tree and I love to incorporate with our usual vegan dishes. πŸ˜πŸ‘

Thank you 😊 I can only imagine how sweet pomegranates picked from the tree must be. Anything eaten soon after being picked has so much more flavour and sweetness.

You are absolutely right, these fresh seeds bring out the natural sweetness, very flavorful additional to veggies dishes. Have you cooked anything with pomegranate seeds so far? 😊

I’m not a great cook, but thank you for saying that. I’ve eaten pomegranates many times but I’ve never cooked with them. Maybe I should look for some recipe ideas and try to use the seeds in my cooking. Thank you for the inspiration 😊

I love how vegan diet inspires all of us to eat healthy and creating our meals with the blessing of Mother Nature. πŸ€— I’m very into holistic ways of life and always want to live accordingly. I’m on gluten free restriction so that is a brilliant idea you have to write a book about these. 😁

These mooncakes’ filling and cover require to stay in the fridge after prepped for many hours before assembling, I sure will share the final result. πŸ˜‹πŸ‘

I had egg sandwiches and a tomato for today's lunch as we went swimming at a lido which I really enjoyed.
