So I have been experimenting with making vegan cheese using homemade cashew milk.
First trial, I used lemon juice and it was liquid, did not form solid, not even a paste. π
This is my second trial, here is how I mixed:
1. Blended 80g cashew nuts with 150 ml water, and added 1 pre/probiotic capsule. Left mixture sit at room temperature for 12 hours.
2. Added 1/2 tsp of salt, 1 tsp apple cider vinegar, 240ml coconut oil, and 2 tsp nutritional yeast.
3. Poured in BPA free silicon herb mold and left in the fridge for few hours.
It didnβt form solid cube but more like a thick kefir type. Hmmm Iβm thinking maybe adding agar. π€
I decided to bake coconut shreds cake with this soft cheese and it tastes delicious. π°ππ
