Monday Breakfast: Gluten-free Vegan purple potatoes and dried cranberries, pumpkin seeds bread. πŸŒ±πŸ πŸžπŸ˜‹β€οΈπŸŒΊ

Hello everyone, hope you have a great start of the week! πŸ€—

For Breakfast today, I baked purple potatoes bread with dried cranberries and pumpkin seeds. I used 1 cup of grain-free bread+muffin mix (made with chia, almond flour, coconut flour) and 1/2 cup of potato starch mixed with purple potatoes purée (200g 🍠). Mixture included: baking powder, xathan gum, and one tbsp of olive oil. Added dried cranberries and pumpkin seeds as the last step. Baked at 375F for 30 mins.

I enjoyed this with a cup of chilled Ajwain seeds and Goji berries 🍡

I wonder why it is not purple as I expected it to be, maybe pigment of purple potatoes is not strong enough to come through. πŸ€”

Looks alright KoKo , maybe something to do with the potatoes all I would suggest is have another go and add a bit more purple potatoes puree.

Hi Byron2020, thank you for your suggestion! It tastes exactly how I like and expect it to be except the color. The mixture paste had a lilac, light purple color and within 30 mins baking was when the color disappeared. I sure will try again and this time maybe steam, add more purΓ©e, make it into a cake and see what happens. πŸ˜πŸ‘

Thanks for sharing another healthy GF vegan dessert idea. Hey if the taste comes out great then the color doesn't matterπŸ‘πŸ˜…. I'm sure you're right ,it probably has something to do with the baking process that caused its loss of color. Maybe it reacted with another ingredientπŸ€·πŸ»β€β™‚οΈ. It can be a dessert, I didn’t have the loaf shaped pan at the moment. πŸ˜‚ Yes, it tastes great and it’s okay if it’s not purple but I’ll try again and see πŸ˜πŸ‘

It's the starch and sugars that makes sweet potatoes look white inside when cooked.

You are absolutely right the starch, sugar, bread mix won’t make it purple as I experimented again today even I changed the amount of ingredients, still won’t come through. πŸ˜…

I think this looks wonderful, GF bread is very difficult to make, so this is a real achievement and sounds wonderful, that would be perfect in the winter being dipped into some piping hot tomato soup πŸ™ƒ Thank you for sharing Koko

Mmm. That sounds very tasty. What is the texture like? I might try it with sweet potatoes. I love pumpkin seeds and it is berry season here in the UK.

Last year was a bumber crop, this year not so good but a few small and rather sharp blackberries to be had.

The texture inside is soft and moist very close to potato texture I would say. I used the grain free bread mix instead so I think it would be different if you choose regular flour. πŸ€”

That’s perfect to try making bread with seasonal crops of pumpkin seeds and berries. I’m sure you will enjoy this combination very much. πŸ˜‹πŸ‘
