I roasted carrots, onion and pumpkin, when near the end of cooking I added cooked puy lentils,baby tomatoes from the garden, some balsamic vinegar & dijon mustard, (you could use wholegrain,) maple syrup and black pepper and a large sprig of fresh rosemary.

Served with creamy mash potato. We loved it so thought I'd share πŸ™‚πŸŒ±
