Last night's dinner

I wanted to use the pumpkin I had in the cupboard and fancied a curry, this was a lovely curry.

I added a handful of dates and some maple syrup (not much) as I felt it needed sweetening a little.

At the end I threw in some cashews, sesame seeds and pumpkin seeds. It was made on the stove but I transferred it to the slow cooker to finish off.

Hmm, I may have doubled the quantity and have 6 or 7 more servings in the freezer. :)
