I thought I'd experiment with some gluten free plant based bread baking as there's nothing like a challenge and this is my first attempt. I used a vegan egg replacer (it's plant cellulose) appart from that I used the same ingredients and this is how it turned out, it has sunk slightly in the middle but I used a mix of gram flour and GF bread mix so am pleased as its tastes nice, I love fruit bread and what makes this interesting is the crust as it has a mild crispness to it and the texture of the bread is good as is the taste and I'm looking forward to having some with a cup of tea later as it'll help to make up for the weather...π

The challenge has worked Jerry, you know how to make bread that's for sure. The king of gluten free.

Ah but Jerry it's what it tastes like, not that it's sunk slightly. I haven't made a gluten free bread that is successful yet, ok in appearance but not in taste and texture.
Fortunately I'm very pleased to say that I can once again tolerate sourdough bread - yayπ
